Creamy Chicken, Mushroom and Brie Soup

Ingredients

peeled and chopped

mushrooms
thinly sliced

garlic clove
minced

flour

chicken stock

shredded chicken

half and half
room temp

Brie
rind removed and cut into pieces, room temp
▢
Flavored Olive Oil
for garnish

Sage

Instructions
Add olive oil to a large stockpot over medium heat. Add in the onions, carrots, and mushrooms. Saute for 5 minutes.
Add in garlic and cook for about 30 seconds.
Whisk in flour until lightly browned, about 1 minute.
Add in chicken stock and chicken. Cook for about 5 minutes stirring occasionally.
Add half and half and brie. Simmer for about 10 minutes until brie has completely melted.
Drizzle with olive oil and garnish with fresh sage.
Notes
*For a more enhanced flavor I suggest using a Mushroom/Sage Olive Oil
