This Holiday Cheese Ball is the perfect easy appetizer for entertaining! Cheeses, dried cranberries, rosemary, and pecans pieces, make for a colorful, and very tasty recipe that requires very little work.
In a large bowl or stand mixer, add the cream cheese, cheddar cheese, 3/4 cup of the cranberries, 3/4 cup of the pecan pieces, rosemary, salt and pepper, and mix until everything is incorporated. Form the mixture into a ball.
In a medium bowl, mix together the remaining 1/4 cup of cranberries, remaining 1/4 cup of pecan pieces, and parsley. Roll ball in mixture until it is completely coated.
Cover tightly with plastic wrap and refrigerate for at least 2 hours (or overnight for best flavor).
