Spring Salad with Asparagus, Peas, Prosciutto and Burrata

Ingredients

pound
White Asparagus cut into 1-1 1/2 inch pieces*
▢

tablespoon
olive oil
▢

oz.
Spring Mix
▢
1/4
cup
peas
▢
2
oz.
Prosciutto
▢
1
ball of Burrata Cheese
Vinaigrette
▢
2
tablespoons
White Balsamic Vinegar
▢
2
tablespoons
Olive Oil
▢
2
tablespoons
Dijon mustard
▢
2
tablespoons
Honey
Instructions
In a skillet add olive oil and saute asparagus until slightly tender, about 5-6 minutes. Cool to room temperature.
Remove burrata from container and let it drain on paper towel.
Spread spring mix onto a platter and later with the other ingredients.
Whisk ingredients of dressing in a small bowl then drizzle on salad.

*Can substitute with green asparagus
