French Onion Soup

Ingredients
 

  • 4 medium onions sliced
  • 1/4 c. melted butter
  • 2 Tbsp. flour
  • 3 cans beef broth
  • 1/4 c. red wine
  • 1/2 c. white wine
  • 2 bay leaves
  • 1 tsp. thyme
  • 1/2 tsp. sugar
  • 1/4 tsp. salt
  • 3/4 c. gruyere cheese
  • French baguette sliced into 1/2 inch slices

Instructions

  • Melt butter, sauté onions for 15 min. Reduce heat, cover.
  • Next add sugar and salt, stirring occasionally until caramelized – 15 minutes.
  • Add flour, stir and cook for one minute. Add broth, wines, and herbs.
  • Bring to a boil, high heat. Reduce and cover partially, simmer 30-45 minutes.
  • Discard bay leaves. Preheat broiler, place baguettes on baking sheet, drizzle with olive oil turning once until golden brown.
  • Ladle soup into bowls, top with slice(s) of bread, add cheese. Broil 5-6 min.
