Melt butter, sauté onions for 15 min. Reduce heat, cover.
Next add sugar and salt, stirring occasionally until caramelized – 15 minutes.
Add flour, stir and cook for one minute. Add broth, wines, and herbs.
Bring to a boil, high heat. Reduce and cover partially, simmer 30-45 minutes.
Discard bay leaves. Preheat broiler, place baguettes on baking sheet, drizzle with olive oil turning once until golden brown.
Ladle soup into bowls, top with slice(s) of bread, add cheese. Broil 5-6 min.
