BBQ Chicken Chili

Ingredients

small red onion
diced (about 1/2 cup)

red potatoes
cubed

chicken broth

teaspoons
salt
▢

teaspoon
chili powder
▢

teaspoon
pepper
▢
1/2
teaspoon
cumin
▢

cups
shredded Rotisserie chicken
▢

oz.
can pinto beans
rinsed and drained
▢
1 15
oz.
can kidney beans
rinsed and drained
▢
1 18
oz.
bottle of BBQ sauce*
▢
Garnishes: Shredded cheddar cheese
cilantro, fritos
Instructions
In a large stockpot saute onion in olive oil for 5 minutes.
Add chicken broth, potatoes, and spices until fork tender (about 10 minutes).
Add chicken, beans, and BBQ sauce. Let it simmer for at least 5 minutes.
Add toppings.
Notes
*Make sure you do not choose a very sweet BBQ sauce - if you do increase chili powder and cumin amounts to combat the sweetness.
