BBQ Chicken Chili

This BBQ Chicken Chili is a hearty chili full of flavor, beans and potatoes. Plus, using a rotisserie chicken makes it quick and easy for any night of the week!

Ingredients
 

  • 1 small red onion diced (about 1/2 cup)
  • 1/3 pound red potatoes diced very small. See Note.
  • 1 1/2 cups chicken broth
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 3 cups shredded rotisserie chicken
  • 15 ounces pinto beans drained and rinsed
  • 15 ounces kidney beans drained and rinsed
  • 18 ounces BBQ sauce See Note.
  • Shredded cheddar cheese, cilantro, Fritos for serving

Instructions

  • In a large pot saute onion in olive oil over medium heat for 3-5 minutes, until soft.
  • Add chicken broth, diced potatoes, and spices. Cook about 15 minutes until potatoes are fork tender.
  • Add chicken, beans, and BBQ sauce. Simmer for 20 minutes.

Notes

  • I used about 6 small baby red potatoes (5.33 ounces) and diced them to about ½ -inch. If they're cut any larger, they'll take longer to cook.
  • Make sure you do not choose a very sweet BBQ sauce - if you do increase chili powder and cumin amounts to combat the sweetness.
