Pimento Cheese

Ingredients

sharp yellow cheddar cheese
▢
1/2
cup
mayonnaise
▢
1/8
teaspoon
cayenne pepper
▢
1/2 4
oz.
jar diced pimentos
about 4 tablespoons
▢

tablespoons
grated Vidalia onion
▢
1
teaspoon
sugar
Instructions
Shred cheese in food processor (or by hand).
Transfer to medium bowl, add the other ingredients. Blend together thoroughly.
Refrigerate covered overnight (at minimum 4 hours).
Notes
I recommend not buying pre-shredded cheese - so you don't have the powdery substance that is on it.
If you cannot find a Vidalia onion, look for a Walla Walla/Sweet Onion or a yellow onion
