Mexican Chicken Casserole

For a lighter option, substitute Greek yogurt for the sour cream and your favorite low fat cheese for the Monterey Jack cheese.

Ingredients
 

  • 1 pound chicken tenders
  • 1/2 onion roughly chopped
  • 1 tablespoon olive oil
  • 1/3 cup salsa
  • 3/4 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 can of black beans rinsed and drained
  • 1 can of corn drained
  • 1 - 4 oz. can green chilies
  • 1 1/2 teaspoon cumin
  • 1 teaspoon Mexican oregano
  • 2 tablespoons fresh cilantro for garnish

Instructions

  • Preheat oven to 350 degrees.
  • Cook chicken and onion in olive oil for 7-9 minutes until cooked through.
  • Cut chicken into bite size pieces and add to a large mixing bowl. Add in the rest of the ingredients except cilantro.
  • Add to greased baking dish. Bake for 20-25 minutes.
  • Garnish with cilantro.
