Mexican Chicken Casserole
For a lighter option, substitute Greek yogurt for the sour cream and your favorite low fat cheese for the Monterey Jack cheese.

Ingredients

chicken tenders

onion
roughly chopped

tablespoon
olive oil

cup
salsa
▢
3/4
cup
sour cream
▢

cup
shredded Monterey Jack cheese
▢

can of black beans
rinsed and drained
▢

can of corn
drained
▢
1 - 4
oz.
can green chilies
▢
1 1/2
teaspoon
cumin
▢

teaspoon
Mexican oregano
▢

tablespoons
fresh cilantro
for garnish
Instructions
Preheat oven to 350 degrees.
Cook chicken and onion in olive oil for 7-9 minutes until cooked through.
Cut chicken into bite size pieces and add to a large mixing bowl. Add in the rest of the ingredients except cilantro.
Add to greased baking dish. Bake for 20-25 minutes.
Garnish with cilantro.
