Ingredients

Shortbread Crust

  • 1/2 cup butter room temperature
  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar

Carmel Layer

  • 1/2 cup butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons light corn syrup

Chocolate Topping:

  • 1 1/4 cups milk chocolate chips
  • 1 tablespoon butter

Instructions

  • Preheat the oven to 350°F and prepare a 9 X 9-inch baking pan.

Shortbread

  • In a medium bowl, mix together the butter, flour and sugar until combined. It will be a bit crumbly. Place into the prepared pan. Bake for 20 minutes or until lightly golden. Allow crust to cool for about 10 minutes before topping with caramel.

Caramel Layer

  • In a medium saucepan, combine the butter, brown sugar, sweetened condensed milk and corn syrup for the caramel to a boil over medium heat. Boil for 5 minutes. Immediately remove from heat and for 3 minutes, beat vigorously with a wooden spoon. Pour over the slightly cooled crust and spread evenly. Allow to firm up for at least 3 hours. This can be done at room temperature.

Chocolate Topping

  • In a small microwaveable bowl, melt the chocolate chips and butter in the microwave in increments of 30 seconds, stirring in between, until completely smooth and melted. Pour the chocolate over the caramel and cover completely. Place into the refrigerator to chill and set for at least 30 minutes.
