Cucumber Tomato Salad

This light Cucumber Tomato Salad is a refreshing side dish or garnish for your summer meals with cucumbers, tomatoes, onions, and feta in a tangy vinaigrette.

Ingredients
 

  • 1 English cucumber quartered
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh parsley chopped or other fresh herbs
  • 1/3 cup feta cheese crumbled
  • 1/3 cup red onion finely diced

Vinaigrette:

  • 1/3 cup white wine vinegar
  • 1 teaspoon red wine vinegar
  • 1/3 cup olive oil
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon dried Italian seasoning

Instructions

  • Before starting, soak the red onion slices in a bowl of cold water for at least 15 minutes (or longer, if possible!). Drain and then add to salad bowl. See Note.
  • Combine all vegetables together in a bowl.
  • Whisk together the vinaigrette ingredients. Pour over the vegetables. Toss to combine.
  • Let it sit in fridge 30 minutes before serving.

Notes

*Soaking onions in a bowl of cold water will help remove the sharp bite of the onion by removing the enzymes that cause it.
