Parmesan Herb Tilapia

Parmesan Tilapia with some olive oil, fresh herbs, and freshly grated cheese is an easy low-carb dinner that's ready in 20 minutes for a tasty weeknight meal.

Ingredients
 

  • 2 Tilapia fillets See note.
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1/4 cup Parmesan cheese
  • 1 teaspoon freshly chopped dill See note.
  • 1 teaspoon freshly chopped parsley
  • lemon wedges for serving if desired

Instructions

  • Preheat oven to 400°F and prepare a baking sheet by lining it with a piece of parchment.
  • Combine olive oil and lemon juice in one dredging dish and the Parmesan and herbs in another.
  • Dredge each fish fillet in the olive oil/lemon juice on both sides and then in Parmesan herb mix. Pat any remaining remaining cheese mixture onto the fish.
  • Bake for 11-13 minutes until opaque at thickest part.

Notes

  • Any white fish will do.
  • Feel free to use just one of the herbs, or use others to your liking.
