This Parmesan Herb Tilapia is an easy low carb option for dinner and can be on your table in under 20 minutes. How can you say no to that?

If you noticed the last two weeks I’ve been going for quick dishes – like this salad and these wraps. I’ve realized with the kids running around during dinner time I cannot have a fussy meal. Yall know that I go through these food phases – there was my BBQ chicken one, my slider phase, and my pot pie one. And now I’m on a Parmesan Herb kick. It first started with this dressing and followed by this Parmesan Herb Tilapia.
I mean how easy can I make it for you? Put olive oil and lemon juice in one dish and grated Parmesan cheese and chopped fresh herbs in the other. Then you dredge each filet in olive oil, then in Parmesan Herb mix, place on a baking sheet and your dinner is done in under 15 minutes. Like I said easy peasy.
And with the weather warming up I don’t want to be inside the whole time. These kiddos need some fresh air. Let’s be honest so does Mama. My guess is you probably do too.

Parmesan Herb Tilapia
Ingredients
- 4 fillets of tilapia*
- 3 tablespoons olive oil
- 2 teaspoons lemon juice
- 1/2 grated Parmesan cheese
- 2 tablespoons chopped fresh herbs
Instructions
- Preheat oven to 400 degrees.
- Combine olive oil and lemon juice in one dredging dish and Parmesan and herbs in another.
- Dredge fish in olive oil on both sides then in Parmesan Herb mix. Repeat with remaining fillets.
- Place on a parchment lined baking sheet. Bake for 11-13 minutes until opaque at thickest part.
