Olive Garden has a Chicken and Gnocchi Soup that I have been dying to remake so I thought why not use my favorite vegetables kale with it?! The broth is a combination of chicken stock, half and half, and Parmesan cheese. I chose the half and half to make the soup a little lighter than some of my more heavier soups like the Creamy Winter Squash Bisque. It was a perfect meal in our house yesterday to warm us up on a cold winter night.
Chicken, Gnocchi, and Kale Soup
Ingredients
- 1 whole chicken breast cut into bite size pieces
- 16 oz. package of gnocchi
- 1 cup kale chopped
- 1 medium onion diced
- 1/2 teaspoon salt
- 4 cups chicken broth
- 3/4 cup shredded Parmesan
- 1 pint half & half
- olive oil for cooking
Instructions
- Bring chicken broth to a boil and place bite size pieces of chicken in the broth to poach the chicken.
- While the chicken is cooking, put a little olive oil in a skillet. Sauté the onion for about 4 minutes. Once the onion starts to soften add in the kale. Stir to let the kale soften.
- Remove the chicken, once it is cooked (not pink inside) but still moist. Depending on the piece sizes it should only take 5-7 minutes. Set aside.
- Add half & half and salt then the onion and kale to pot with the chicken broth. Bring to a simmer and then add in the Parmesan cheese. Continue stirring so cheese doesn't clump together.
- Over medium-high heat bring to a boil. Depending on what kind of gnocchi you get will determine when to add it to the soup as well as the chicken. I added both, it and the chicken at the same time because mine only needed 3-4 minutes to cook so. Only add the chicken in during the last few minutes (3-4) of cooking so it still remains moist.

When I saw this holiday I didn’t automatically think of sweet dessert pies. I think of my savory pies of course. So if you like savory ones try out my Mexican Pie or my Shepherd’s Pie. I did recently hear of a recipe I wanted to toy with it’s a sweet potato and ground turkey version of a Shepherd’s Pie. Maybe at some point I’ll make a classic apple pie.
