I think basil is one of my favorite herbs to cook with. Most people to use it to make pesto even though I like to change it up by making kale pesto. But this was the first herb that I have kept alive now for 8 months and it is still growing so maybe this is why I have a special bond to it. I had it outside in a big pot with tarragon and oregano until winter came and moved it inside to a mason jar. Idea via Pinterest, of course!
You can use it in so many ways:
Any of my numerous Caprese dishes such as Caprese Chicken, Tomato Napoleons, Roasted Red Pepper Grilled Cheese, or Caprese Baked Eggs (yes I know I have an obsession with all things Caprese)
Or the ever so popular use for a Tomato Basil Soup which I add a twist in my Tomato Tortellini Bisque,
Or you can mix it in sauces like a Tarragon & Basil Marinara,
Or add to it pastas like Fettuccine Bolognese or Roasted Red Pepper, Goat Cheese and Herb Gnocchi
Or my friend Elise’s favorite recipe of mine Country Skillet Corn.
Tip: 1 tsp. dried basil = 1 Tbsp. fresh basil – To be honest I can’t even remember the last time I used dried basil was.
