One type of food that I love is Indian food. Now as for the rest of my family…John actually enjoys it – but mainly when I make it (unless we go out to eat with the Simpsons), my father in law thinks it all looks the same, my parents won’t try it because of all the spices, but one person I can count on to enjoy it with is John’s cousin Jessica. We go to this place in Birmingham called Mughal Indian. My favorite thing to get there is the Baingan Bharta dish. This dish originated as a winter dish that the women would make by roasting the eggplant and cooking it to a hash with onions and tomatoes. Yummy! I am trying to perfect the recipe.
So needless to say I was pretty excited recently when I found a Indian food truck called Spice Box Indy. The first time I tried it I had the Murgh Makhani, also known as Indian Butter Chicken. This dish is full of aromatic spices. The chicken is mered in a creamy tomato sauce and usually has garam masala (my new favorite spice) and cayenne. Serve it with some naan and rice and you have a great easy dish!!
But back to Baingan Bharta, as I was exploring Carmel, Indiana a few months back I found an Indian grocery store. I was stoked and got a few things to try out.
Now I am not a fan of packaged meals, but did find the store to have a Baingan Bharta mix that I wanted to try out. So I reinvented the wheel a little bit and cooked it on stove, I made some lamb meatballs and simmered them in the sauce, and then added rice & whole wheat pita. And this is what I came up with! And it was super delicious!

Tikka Masala! We were introduced to Indian food in Budapest…apparently one of the best places in Europe (based off our friends opinions). It was amazing…I haven’t found a place like it since. As for my own cooking, I have a great slow cooker version…and a packaged spice mix from the Indian store in Kennesaw.
