Lately things have been a little crazy in the Hall house. Even though cooking is a great stress reliever for me, the crock pot comes to my rescue in times of need. Just chop a few veggies and add the rest of the ingredients and let the slow cooker do it’s thing.
With this recipe you can change out the red white for white wine if you prefer to. The main difference is in southern Italy, cacciatore often uses red wine, while northern Italy uses white wine. Both flavors are amazing!

Chicken Cacciatore
Ingredients
- 4 chicken breasts
- 1 yellow bell pepper diced
- 1 carrot chopped
- 1 medium onion diced
- 4 garlic cloves minced
- 2 tablespoons. capers
- 1 tablespoons oregano
- 28 oz. can crushed tomatoes
- 3/4 cup. red wine
- 3/4 cup chicken stock
- fresh parsley for garnish
Instructions
- Chop all the veggies and place in the bottom of the crockpot. Add the rest of the ingredients (except parsley and pasta).
- Cook on low heat for 8 hours.
- Garnish with fresh parsley.
