So this is obviously not your average food post as you can see from the title but just a little baby update. I entered into the third trimester last week. According to one of the websites John Grayson is the size of a large eggplant – so the recipe for this week is my eggplant and goat cheese sandwiches. He should be a little over 2 lbs. and 15 inches from head to heel and if he’s anything like John as a baby is growing like a weed!
My sweet friend Abby recently came to visit and she helped me with a few touches on the nursery like finally finding my curtains.
And trust me she was my good luck charm because I have gone through way too many panels of curtains and finally decided on these from Pottery Barn Kids that matched his crib sheets.
John put together our stroller!
And then this past weekend my childhood best friend Lindsey came up to do my maternity pictures. You definitely need to check her out – Lindsey Hansen Photography
As for cravings they change all the time. Last week was BBQ which would have fit perfectly with the herb cornbread I just made. This morning I had a huge craving for doughnuts and the pregnancy fairy (aka a coworker) magically appeared with one. Luckily I had my green goddess juice last night to make up for it…isn’t that how it all works?
And Wednesday stay tuned for a Bacon, Onion, Mushroom and Sage Frittata that I made for mine and John’s anniversary!
80 days to go!!!
Menu for the Week
Pomegranate Lamb Kebabs with Raita & Parmesan Smashed Potatoes
Caramelized Cauliflower Tagliatelle with Hazelnut Pesto
Honey Mustard Pretzel Chicken with Oven Baked Sweet Potato Wedges
Dessert: Milky Way Cookies
