What do I need for this easy dip recipe?
- black beans
make sure they’re drained and rinsed before putting them into the bowl. - corn
I use canned corn for this recipe, but fresh corn would be quite delicious as well. No need to cook it because it’s super delicious when it’s raw. Make sure you have enough for 1 ¾ cups. - crumbled Feta cheese
You can also purchase block feta and just crumble that into the bowl. - green onions
- apple cider vinegar
- olive oil
- granulated sugar
- garlic powder
Corn Salad
How long will this corn salad keep for?
I suggest storing it in the refrigerator in an airtight container.
It should last 3-4 days this way.
That is, IF there ARE any leftovers to store in the fridge.

Can you make this a day ahead?
Lauren Hall says
Yes it’s actually better this way!! If you find that it gets a little too liquedy then you can drain it some.

How many people does this serve?
Lauren Hall says
Marci I have this at most of our parties so I would say 10-15 depending on what else is served.

Thank you for your prompt response. I was thinking about making half the recipe since I’m only having eight people over but I think I’ll make the whole recipe just to be sure. I’m also serving other things but better safe than sorry. All the best! Marci
