- 1 pounds of fresh green beans, rinsed, trimmed, and cut in half
- 2 tablespoons butter
- 2 tablespoons olive oil
- 8 ounces sliced white mushrooms
- 1 small yellow onion, minced
- ¼ cup flour
- ½ cup chicken broth
- ⅓ cup sherry
- 1 teaspoon Worcestershire sauce
- ½ teaspoon kosher salt

- ½ cup heavy cream

First, preheat the oven to 375 degrees F. Spray an 8 X 8 baking dish with cooking spray and set it aside.
Blanching the green beans
Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes. Remove them from the boiling water with a slotted spoon and immediately place them in a large bowl of ice water to stop the cooking process. Drain the green beans and set aside for later.
Assembling the casserole

- Place the green bean mixture into the prepared baking dish. Top with fried onions.
- Bake for 18-20 minutes. If the topping starts to get too brown cover loosely with foil for the last 7 minutes or so.
