This meal is easy to make in the Crockpot and doesn’t take a full day to cook. Unlike many Chinese takeout recipes, this version isn’t fried, making it a little more calorie-conscious. When I made it, everyone loved it so much we didn’t have any leftovers at all!

Why You’ll Love this Easy Sesame Chicken

Honey sesame chicken is one of the most popular dishes at Chinese restaurants. The sweet sauce is seriously addicting, and it is great on a bed of rice.

This version is so easy that you can fix it and forget it, making it great for busy weeknights or when you need to feed a crowd.

Having a recipe without fried batter on the chicken makes this better if you’re watching your diet, without sacrificing any of the flavor of this family favorite!

How to make Honey Sesame Chicken in the Crockpot

Place chicken in the bowl of a crock pot. Combine soy sauce, honey, ketchup, sesame oil, ginger, red pepper flakes, minced garlic, and white pepper in a small bowl until well combined. Pour over the chicken.

Set the crock pot to “LOW”. Cook for 2.5 hours or until chicken is cooked through. Remove the chicken from the crock pot and cut into bite-sized pieces.

In a small bowl, add cornstarch and water, then stir to combine. Stir the cornstarch slurry into the sauce in the slow cooker. Let it thicken as it cooks for about 10 minutes.

Turn the temperature to warm, or if yours doesn’t have that setting, just turn it off. Add chicken and turn until the sauce coats it, letting it sit for about 2-3 minutes.

Remove the chicken, sprinkle with sesame seeds, and garnish with green onions. Serve over white or brown rice or noodles.

Is your slow cooker a fixture in your home? If not, it should be! I used to dread crockpot meals because many of them were so bland. I learned that the key to a great slow cooker meal is flavor, and this delicious recipe is packed full of great flavor from ground paprika, Dijon mustard, and Worcestershire sauce. Topped with a mix of cheese, these potatoes will satisfy the whole family!

What are Scalloped Potatoes?

Scalloped potatoes are sliced potatoes cooked in a creamy sauce. The name comes from cutting the potatoes into thinly-sliced circles or scallops!

A traditional scalloped potato recipe doesn’t have cheese (that would be Au Gratin Potatoes), but we’re adding it anyway because cheese and potatoes are a match made in heaven!

What do I need to make these Cheesy Potatoes?

You can make these scalloped potatoes with just a few simple ingredients:

1 cup of sour cream

1 can of condensed cream of potato soup

1 tablespoon of Worcestershire Sauce

2 teaspoons of Dijon mustard

2 pounds small red potatoes

½ cup of cheddar cheese

1 cup of Swiss cheese

1 teaspoon of paprika

Salt and pepper

Chives for garnish

Do I need any special equipment to make this recipe?

It helps to use a mandolin for thinly sliced potatoes. However, you can use a sharp knife to cut very thin slices as well. And, of course, you need a good slow cooker!

Can I use other potatoes in this recipe?

Because this recipe is made in the slow cooker, red potatoes work really well as they hold their shape and don’t get too mushy. You can also use more starchy potatoes like Yukon Gold potatoes or Russet potatoes, but they may get too soft and tender.

How to make Slow Cooker Scalloped Potatoes

It only takes about 20 minutes to prep these potatoes for cooking!

First, use a mandolin or sharp knife to cut potatoes into very thin slices. Then, in a large mixing bowl, add sour cream, cream of potato soup, Worcestershire sauce, Dijon mustard, half of the paprika, salt, and pepper. Mix these ingredients well, then add in the potato slices and stir until they are well-coated with the creamy mixture.

Spray your Crockpot with cooking spray. This will help keep the cheese from sticking to the edges as it cooks. Spoon ½ of the potato mixture into the bottom of the slow cooker.

Add half of each kind of cheese, then repeat the layers with the remaining potatoes and cheese.

Cover the slow cooker with the lid and set it to cook on low for 3 – 4 hours. The potatoes will be done when fork-tender and the cheese melts throughout. Top the potatoes with the remaining paprika and chives.

For a pretty presentation, transfer the crock pot scalloped potatoes to a casserole dish or large bowl before adding the toppings.

Recipe Tips

I’ve found it makes a difference what kind of sour cream you use in this recipe. I prefer Daisy’s or Breakstone. Other brands are often too soupy, and the potatoes also turn out that way.

On that note, use full-fat products. They hold up the best in a slow cooker, and scalloped potatoes are an indulgent dish! Fat-free or reduced-fat products are not the best choice for this recipe.

These potatoes will cook best on low heat, but you can always use high heat if you are in a time pinch.

What goes well with Slow Cooker Scalloped Potatoes?

I love serving these delicious potatoes as part of a holiday dinner or other special occasions with my Glazed Ham recipe. They’re also fantastic with this Cinnamon Balsamic Pork Tenderloin or this Honey Mustard Pretzel Chicken.

Really, you can serve this perfect side dish with just about anything!

How to store leftover Scalloped Potatoes

You can store these in the refrigerator or freeze them to use in another meal! Let your leftovers cool completely to room temperature. Store them in an airtight container and refrigerate for up to 3 days.

If you want to freeze your potatoes, cover them with a layer of plastic wrap or aluminum foil and freeze them for up to 3 months.

To reheat your potatoes, cover them with aluminum foil and heat them in the oven at 350 degrees for about 30 minutes. Stir and serve!

Imagine coming home to the warm scents of cinnamon, nutmeg, and cloves simmering in your slow cooker. The best part is smoothing that warm apple butter over homemade biscuits for a delightful snack!

Fall is officially here! I know this because not only was it 43 degrees yesterday, but I started pulling out the wardrobe to make it official. My favorite things about fall are the beautiful leaves, football, the start of hockey season, apples, pumpkins, sweaters & boots, chili, etc.

This apple butter combines some of my favorite fall things together—delightful spices, apples, and comforting treats. There is nothing easier than tossing apples and a few other ingredients into a slow cooker and letting it do its job.

What is Apple Butter?

I think the first time I had apple butter was at Cracker Barrel years ago. It’s a delicious spread, similar to applesauce, but thicker, with added spices. I thought it was heaven in a jar!

Once I found out how easy it was to make, I resolved to have it in our fridge at all times! Since apple season is upon us, it’s especially easy to whip up a large batch to keep on hand all through the fall and winter.

Ingredients for Slow Cooker Apple Butter

You only need a few simple ingredients to make this easy apple butter recipe in your slow cooker. Here’s what you need:

3 pounds of apples (peeled, cored, and sliced) – I used Gala

½ cup granulated sugar

½ cup light brown sugar

2 teaspoons of cinnamon

½ teaspoon of freshly ground nutmeg

¼ teaspoon of ground cloves

¼ teaspoon of salt

2 teaspoons pure vanilla extract

Choosing the Best Kind of Apples for Apple Butter

Since making apple butter requires quite a bit of time, choose a softer variety of apples as they cook down more quickly. Fuji apples, Golden Delicious, Braeburn or Gala apples are popular choices for apple butter. I don’t recommend using Granny Smith and similar apples, as they are too firm, and I don’t like using tart apples in this recipe.

How to make Slow Cooker Apple Butter

Making your own delicious apple butter could not be easier!

Prepare your apples: Wash, peel, core, and slice your apples. You can do thin wedges or cubes, it doesn’t really matter.

Spice it up: Place the granulated sugar, brown sugar, cinnamon, nutmeg, cloves, salt, and vanilla extract in a medium bowl and stir to combine. Place the apples in the slow cooker and cover them with the sugar and spice mixture. Toss well to fully coat the apples.

Cook: Place the lid on the crock pot and cook on low for 8 hours, stirring occasionally, until the apple butter is dark brown and thick. Uncover the slow cooker and cook for 2 more hours, stirring occasionally.

Blend: Turn the slow cooker off. Use an immersion blender to puree the apple butter until it is smooth.

If you don’t have an immersion blender, let the mixture cool until just slightly warm, then pour it into a regular blender and puree until smooth.

There was my honey mustard kick with these Brussels sprouts, this dressing & salad, and these chicken tenders. Then came the bean kick with this casserole, baked beans, and burgers. Now I am all about the Mexican food!

Some of you might be raising your eyebrows because let’s be honest when do I not love some Mexican food?! Last week it was this salad. Today I brought you these Slow Cooker Beer Chicken Tacos with Peach Salsa. And next week well I would let it be a surprise…but I am not very good at keeping them so check back for some Cherry Margaritas.

See I told you I get a little crazy with food themes.

And what better way to celebrate Taco Thursday again? Especially after what we endured the last few weeks. And did I mention I got strep this week? I am pretty sure our house has hit the sickness quota for the next month…or at least I pray we have!

So much for giving you a recipe this week and catching up on Friday Feedings…I guess there’s always next week right?

I first thought of these tacos when I had a fruit salsa on some black bean tostadas awhile back. That got those food blogger wheels a turning. I realized I only have one salsa recipe on the blog – well two if you count this one. That needed to change, so this peach salsa came to fruition.

This of course all paired well when I found Abita Peach Harvest beer. But any kind of citrus fruit beer will do. I can also recommend Blue Moon (which is always in season), Goose Island Summer Ale or Bell’s Oberon Ale.

I can’t believe it is already July!! I can’t believe the week is halfway over! I also can’t believe I am finally getting around to sharing this amazing and easy recipe for Slow Cooker BBQ Pulled Pork Sandwiches. I know some of you are saying finally!! Especially since I had developed this recipe months ago. I mean it’s this thing called a newborn – he requires pretty much all of my attention these days. And I am A OK with that! I mean he is pretty precious if you haven’t seen him.

Which is why I look forward to Saturdays even more than I used to now. John and I now call them mommy days. He is sweet and takes care of John Grayson so I can get errands done and cook.

And last Saturday in particular was filled with me spending all day in the kitchen, as you probably could tell from Instagram. I made Baked Eggs, Cheese and Bacon, a Blueberry Smoothie, Cherry Fizz Cocktail, Coleslaw and BBQ Pulled Pork Mac and Cheese – all recipes that needed to be tested or photographed.

Now if you ever look at my menus on my blog you know that we have been eating these BBQ sandwiches like twice a month. One because they are that easy and two who doesn’t love BBQ?! Well actually that used to be me – one thing I know that John is glad that changed.

One of the things I love about barbecue sauce is the variety of flavors and profiles. You got sweet, spicy, tangy, honey bourbon, chipotle, hickory smoke – the list goes on. So since the 4th of July is right around the corner. Why wouldn’t you eat some barbecue?

Now I know technically we are supposed to be firing up the grill and watching the fireworks but why not give that grill a break or just grill some vegetables and let this slow cooker dish be the star!

All you need is some BBQ sauce (store bought or homemade), an apple and onion, pork butt, and some hamburger buns (another 5 ingredient fix meals).

You can leave the sandwich as is or of course you can always add some cheese (I recommend Gouda) or coleslaw to top it off. And as for leftovers (that is if you have any) just wait until you see what I have in store for you next week- BBQ Pulled Pork Mac & Cheese – a match made in heaven.

So go ahead crack open a beer, fire up the slow cooker and let it go to work. Have a good and safe 4th everyone!

Pictures updated February 2015.

And on a day that is currently 18 degrees (worse when the wind is blowing), there is nothing better than a bowl of chili and a piece of cornbread to warm the whole body up! So this inspired me last weekend to reinvent my go to chili!

Photos updated February 2015

Opening day of football season is when it officially starts for me. John and I kicked it off with going to Dallas. Some people know of Fall when Pumpkin Spice Lattesare on the menu at Starbucks, even though in the winter I always prefer hot apple cider. Besides those fall to me is …

Pumpkins

Scarecrows

Making my first batch of chili (recipe below)

My birthday!

Fall Leaves

Pulling out all of my autumn decorations

Cool Crisp Nights

Thanksgiving

Gatherings of Family & Friends

Now in my family this chili is known as Joe’s chili – because it was actually the first chili I ever cooked by myself. And it was John’s best friend Joe who taught me how. But with the combination of corn and black beans and tomatoes in my mind it’s a fiesta kind of chili.

Some people love cheese in their chili and some don’t. We all know how I feel about cheese! So John and I put a spoonful sour cream on top and lather on the shredded cheese. This chili is a combinaton of sweet and spicy and gives the range to change it to be a little more sweet or a little more spicy – whichever you prefer. Sweet for my mama and spicy for John.

And let’s not forget you always need some cornbread with it to make it complete!

If I could bottle up the aroma that was in my house last week I would almost wear it as perfume. Well not really but the smell of this dish is that good. I got this recipe back in May from Foodie Pen Pal Cara. This was actually the first time I had ever cooked a full pork shoulder. The original recipe came from The Pioneer Woman.I decided to add more of a spice rub to the dish to give it more of a Texan flair, and reduce the chipotle peppers & Dr. Pepper (since I am not the biggest fan of the soda, yes I know this is a main component). I was pretty impressed with myself and how it turned out. And what’s even better is all I had to do was throw all the ingredients together and pop it in the oven for a few hours while I worked around the house. John was also pleased with the meal, I mean what husband wouldn’t be with a huge plate of meat? Next time we thought of adding a little bit of bourbon to keep things interesting. Enjoy!
